Throughout my tenure at Galileo I produced hundreds of videos like these. Some were student-facing (to be shown directly in the classroom), others were instructor-facing and meant to speed up their grasp of a complex or visual subject so they could quickly turn around and teach it in the classroom.

iMovie
Adobe Premiere Pro
OBS (Open Broadcaster Software) for screencasting
Because many of these videos were instructor-facing, production quality was not a main priority (the priority was to clearly communicate the information as quickly and succinctly as possible). As such, many of these videos were shot with no special video production equipment or lighting, and edited quickly in iMovie.
